If that is not possible, you should park the car and seek shelter in a sturdy building. If no buildings are available, lie flat and face-down on low ground, protecting the back of your head with your arms. Get as far away from trees and cars as you can, as they may be blown onto you in a tornado. NOAA further advises that, despite popular myth, a highway overpass is definitely not a safe location. In all my years of camping, I have had to take refuge from tornadoes only twice. But each was a fairly unnerving experience, because all you can do is wait to see what will happen. In both cases, suitable shelter buildings were within easy distance, which will typically be the case unless you are back-country camping. That doesn't mean you should not go back-country camping, but it does mean you need a plan for your specific camping location.

Pitching Your Camping Tent

If you have gone on a family camping trip and found out that you made some bad choices when it comes to pitching your tent, here are some things to remember. Things you will want to do include placing your tent in a flat dry area preferably on a slight incline to provide runoff if it rains. We pitched our family camping tents in a low area one time and it came up that night and rained. We found ourselves in a puddle and had to evacuate to our friend's van. The wind blew and finally our camping tent collapsed. The next morning we packed up our soggy tent and placed it in the back of our pickup. The camper next door came over and said "sure glad I wasn't sleeping in that tent last night". We had to control ourselves from exploding into laughter as we realized this man didn't know that he was talking to the people that had been sleeping in that tent.

Be sure that there are no rocks, branches or other objects that would prove to be uncomfortable to lie on or might puncture your tent. Position the opening away from the wind to keep you warm. If you are unsure of the wind direction, throw something lightweight into the air and see which way it goes. Always drive tent stakes in very good and tie lines as if you thought it was going to storm. Make sure the area you pick does not have a tree above with loose limbs, as they could fall on your tent. Keep your tent clean and crumb free, crumbs attract ants and bugs.

Camping and Essential Food Hygiene

One of the great pastimes of all time has to be the camping holiday. So many of us work at the same old job day in and day out going through the same old routines time and time again. We long for the day when we can hang up that apron, pack everything we need into a back pack and head out onto the open road. At least some of us do.

Camping holidays vary greatly. To some camping may be sleeping rough next to the camp fire with only the stars for a roof. To others camping may be a luxury safari in Kenya where everything is meticulously planned right down to the champagne on ice and after eight mint on the pillow. Whatever our dream camping holiday may be, we should remember that we are no longer in our natural environment. We can no longer say that we are entirely suited to living out in the open. The days when our distant ancestors were hunter gatherers are long gone and the level of natural immunity that they possessed we can only wish for.

When we are in an outdoor environment for an extended period of time we need to keep in mind that we take care of all of our needs in the same environment whereas in our homes we have created separate environments to cater for our various needs. When we are in the outdoor environment we actually have very limited control over it. The quality of water in a natural environment is what it is. We can do nothing to change it nor can we do much to deter insect vectors such as flies, ants, ticks and leeches, for example.

The only way we can control the effect that the environment has on us is to control the way we organize ourselves within it. The most important logistical problem that we face from a food hygiene aspect is the problem of water. We must have a safe source of water. The second most important problem that we face is having safe food to eat and the third most important problem that we have to contend with is how to take care of our personal hygiene needs without contaminating the area in which we have to live. Ideally these should be three separate areas. This will reduce the risks of cross contamination.

On a camping trip we may have only one source of water which we have to use for purposes of hygiene, cooking and drinking. This presents a challenge which needs to be addressed. Indeed, a great many cases of serious food and water poisoning originate on camping trips. I can vouch for this personally.

The four golden rule of food hygiene apply as much outdoors as they do indoors. Lets take a look at the four rules and see how to apply them successfully in the camp site scenario.

Rule 1. Buy food from a safe source.
In the camp site this means take food that will not perish. Sterilized packs of food can be bought in specialist outdoors shops which are identical to those used by special forces. Failing that take dried foods and foods that have been packed in small tin cans, tubes, concentrates etc. Avoid taking fresh meats and fish at all costs. Even cooked meat will have a very limited life and can only be taken into account as a packed lunch for the first day to be eaten within four hours of setting off. Fruit such as apples can be taken for several days provided they are washed properly, dried and wrapped in a plastic bag in individual portions. Eggs should be avoided also unless you can get them fresh on your trip. Boil them for no less than 10 minutes. Likewise some hard vegetables such as carrots can be taken for the first couple of days. Again it is best to peel them, wash them thoroughly, dry them and wrap them hermetically in a plastic bag. Do not eat local food on trips unless you are absolutely sure that the source is safe. If you are unsure about a water source it is better to drink fresh milk than drink the water. If you catch dysentery you may well loose more water than you can intake.

Rule 2.Prevent bacteria from entering your food.
Again, by having your food closed in hermetically sealed wrapping the possibility of contamination is greatly reduced. Do not open more than you need for each meal. Do not mix food which has been opened with closed food. Do not leave food for long periods unattended. Either eat it or cook it. Preferably cook it. When handling foods make sure that you are clean, particularly hands and nails. Do not use knives that have been used for any other purpose other than for food. Clean them thoroughly before use as well as after use. Likewise, clean your bowls, plates, cups, knives and forks before eating and drinking as well as directly after the meal. Once clean I recommend putting them into a clean plastic bag to avoid contamination while on the trail. Use only clean water for cooking. If you are unsure of the water source and you have no other use a camp carbon filtration system or use chlorine water purification tablets. The water won't taste great but it will make it drinkable provided there are no chemical contaminates in it.

Rule 3. Prevent the multiplication of bacteria in your food.
As you may have no way of keeping your cold food at a correct cold temperature it is always wise to eat all your food hot. Don't leave food laying around. If your food source is all but sterile to begin with you won't have many worries about the multiplication of bacteria in your food. The secret is to open it and eat it or heat it up and eat it as soon as possible. By that I mean within twenty minutes of being cooked. With a bit of correct organization and compromise on five star cuisine one can all but eliminate this stage.

Rule 4. Destroy bacteria on utensils and work surfaces.
Once again prior organization is the order of the day. Always take some washing up liquid and Lysol or dettol hygiene spray or wipes. Wash all work surfaces thoroughly with soap and rinse with water followed by spraying it with Lysol spray or wiping with an anti bacterial wipe. Do this before and after use. As previously stated wash all eating utensils before and after use. After use spray or wipe with an anti bacterial product and wrap in a clean plastic bag. Seal it as hermetically as possible. Discard the plastic bag after opening it for the next use. Old wrapping should be collected in a trash bag and taken home with you.

Keep your dirty clothing as far away as possible from your eating utensils and food. Make a field toilet at least fifty paces away from your camp site. Even if this is a hole in the ground make sure that you cover your excretions with some of the soil or sand that you have dug from the hole. If you have it pour a little chemical sanitizer onto the soil to deter flies. Avoid camping where others have defecated in the open. Scour the area before choosing the location. Do not wash and brush your teeth in the same area that you go to the toilet or eat. Choose a place suitable for this. If you cant wash as well as you would like use hygienic wipes. Particularly use them after washing your hands after visiting the toilet.

Many people like to entertain the notion that one is allowed to be a bit more lax on a camping holiday. This is the pitfall that causes so many people to fall terribly ill when camping. Nothing could be further from the truth. A healthy and successful camping trip requires quite a high level of forethought, prior organization and planning and an appropriate level of self discipline without ruining the holiday by being overly fanatical and obsessive. This is not what I am advocating. If performed systematically all of my suggestions should take no more than a few minutes of your time around mealtimes and safeguard you against several unpleasant days in hospital and a lifetime's bad memory.

Camping - A Great Family Vacation!

It seems all to familiar, almost cliche-like now- tough economic times have us watching every penny we spend. Typically the first expense a family is forced to dismiss is their vacation. Ironically, its the very avenue we reward ourselves with for all the efforts we've tended to throughout the year. It seems now, more than ever, a vacation is certainly warranted.

Many times when considering a vacation, the idea of packing the family up and heading out into the 'unknown' is, well, not an option. Some view it with insurmountable odds, claiming it'd be to much on the little ones, or one must be experienced in the great outdoors in order for it to be successful. These 2 points could not be further from the truth, nor could the argument that camping is to expensive. With the three P's of camping, 1) Proper planning 2) Proper place 3) Proper packing, this outdoor experience is one likely to become a family vacation tradition! (I've seen this tradition grow to include, but not be limited to, extended family, neighbors, co-workers, etc.).

It is imperative, as with any thing in life we chose to do, that homework be done in the early phase of planning a camping trip. Sixteen years ago, when I began camping with both my 6 month old son and my then 2 year old son, websites with virtual tours of camping facilities were not yet available. However, in my quest to do it properly, the months of February and March were spent driving hours to visit possible locations to pitch our tent in the coming months. Oh, these trips were made into fun loving, adventurous outings, the car packed with goodies and loads of easy roadway games! Now though, the computer is a great way to explore various camping sites, what they offer, prices, etc.

When trying to determine the best possible camping facility for your family, there are many factors to take into consideration. (For this writing consideration is taken, but not limited to, family's with children age 1 year plus).

- How far from home do you wish to be? Children get sick, this is an outdoor vacation.
- What activities does your family enjoy? (bike riding, swimming, boating, fishing, hiking )

* if swimming at facility, (pool, lake) is there a lifeguard on duty?

* can fishing poles, bikes be rented?

* for the adventurous, fishing license required, can caught fish be kept (cooked for dinner?)

* canoes, rafts, etc. are they allowed on lake, can they be rented- age specified?

* inquire as to arts/crafts and other activities facility provides free of charge.

- Minimum stay/ night requirement? (its advisable while enthusiasm may rend wild, 3-4 nights for first trip)
- Electricity, running water provided at individual campsite? (some do however, cost/night more)
- Shower/toliet facilities, are there any and how old.
- Forest Ranger on duty, 24/7? (this is important as we had a bear visit us twice in one night and Ranger on duty came from his home, 5 minutes away. At another facility, no Ranger on duty in PM hours.)
- Without physically visiting campgrounds it may be difficult to determine average age of campers, geared toward family or 20 year olds. (One facility in Upstate NY bands played all night, every night, with 4 and 5 yr. olds this was quite disruptive!)
- What is cancellation policy in the event of rain, child sick,etc. (most are very accomodating to re-book up to one year after scheduled stay.)
- Is there commissary store for incidentals on property? (having to drive around unfamiliar territory at 9:00pm for Children's Tylenol- yes, there will be a check-list provided so you have it all, but just in case)

Obtaining this information prior to reserving a campsite allows a formidable decision leaving much less room for error.

...and subsequently much more time for enjoyment and relaxation. Look for future information pertaining to picking the perfect campsite and of course, just what to bring.

A Tour of Halong Bay

My bike is sitting un-used in my room, waiting for a ride. I have not cycled since arrival in Hanoi as it looks to be quite a big challenge to navigate the horrible traffic congestion out on those streets. It is the worst I've ever seen, and I've been to quite a number of third world countries. It is a total free-for-all out there. Accidents are commonplace, much like bumper cars, except with bicycles, motor bikes, and pedestrians running into each other.

I was up early for an all day guided tour to Halong Bay. The cost was $29 and included lunch. I originally had planned on cycling out to Halong and then spending a couple of days exploring that area, but I'm already a couple of days behind my planned time for this trip and by taking a commercial tour, it will get me back on track. At 6:30am I took the elevator down to the lobby, it was pitch back inside and outside, no lighting in the lobby at all. The front doors were locked and closed shutters blocked the view to the street. As I got used to the darkness and looked around the lobby, I could make out people sleeping on cots and also that there were a number of motor bikes parked in the lobby too. I stood around wondering how I was going to get outside where I would be picked up by the tour company mini-van. Soon, a few of those sleeping bodies began to stir and awaken. Within a few minutes they were all getting off their cots, turning on the lights, folding the cots up along with their bedding, and preparing for the work day ahead. These people were all hotel employees, and I surmised that this hotel is also their home. What a way to exist! I'm sure many other employees live in the same manner at other businesses.

The tour van came by at exactly 7:30am and we headed east out of the city on our way to the Gulf of Tonkin, 115 miles away. We soon crossed over the Red River, named not for political reasons, but because of a mineral in the river that turns the water a red color. The trip to Halong would take 3 1/2 hours and part way our group of 8 tourists stopped at a small village for a tour of a cottage industry. This occurred I would guess, because the driver would get a commission on whatever we would purchase while shopping there. It seems that every village produces or manufactures a particular product or item, and in this case it was a village of silk weavers and embroiders. I must admit, these artists did amazing work. When given a small 6 inch photograph, they would embroider a duplicate scene to a size of 12 inches, or up to a three foot size reproduction in perfect detail, using about 100 stitches or more per inch. You could stand a foot away and not be able to tell that it was not an enlargement of the photo, or a very good oil reproduction. I was really impressed with the quality and would have loved to have purchased one, but such is my limitation when touring by bicycle. Space is always a big consideration and at a premium, with no extra room for non-necessities. When one of these masterpieces is finished, it is fairly weighty and quite stiff, so they cannot be rolled into a smaller package.

After that break, we continued on. I found myself sitting next to a young gal from Canada named Jennifer. She is working in Vietnam and was on a break, therefore taking today's tour. Her job description is something we would all probably love. She works for an international five star hotel chain and therefore travels world wide checking into the company's hotels, incognito, and spending five days at each one. She uses all the amenities the hotel offers in addition to eating in their restaurants, and then writes a report on her findings. After a five day stay, she flies on to the next one. All her expenses are paid, and she gets a salary in addition. I didn't know such a job existed! She told me she is due for a vacation soon, and I asked her where she will go on a vacation as it appeared to me that she is on a perpetual vacation. He favorite vacation spot... Thailand! Mine too! Then she told me that when she goes on a vacation, she never stays in a five star accommodation, even with a big discount, she prefers smaller, unique accommodations with a local atmosphere instead of the same-same accommodations of the big chain hotels. She asked me for some suggestions on places to go and places to stay in Thailand, and I offered her some advice on great locations like Koh Samui, and Phuket which are a couple of my favorite places to visit.

After our little shopping spree, we continued on. This mini-van driver was much more sane than the insane driver I had from the airport. At one point we passed a truck load of ducks, each one was placed in a white sack with a slit for the duck's head. There must have been at least a thousand birds packed on that truck and all their heads were bobbing up and down and darting in every which direction. We were all amused at that sight. Legend says that a huge dragon ran down from the highest mountains and into the sea at Halong Bay. On it's way down the mountainside, the dragon's immense tail was swaying to and fro and thereby digging very deep valleys and raising the soil to form higher mountains. These deep valleys were then filled with sea water and that action created the 3,000 islands that make up Halong Bay.

When we arrived at the pier on the bay shore, we were divided into 3 groups, so each group had it's own guide/translator. Each group also had it's own boat. The group I was in boarded a 40 foot long converted junk that was actually pretty nice with a lower deck that served as a dinning room, and an open air upper deck which was for lounging. Our guide's name was Tom. Tom was a girl. Of course I teased her about the name, and she would just look at me with a 'I don't understand look'. I didn't think she knew anything about teasing, so I explained that I was just having fun with her name. She told me she loved Americans!

We were served a great meal in the dinning room of the boat. There were 6 large plates of food, served family style, plus rice and drinks. The boat trip took us through a number of islands and we all relaxed on the teak lounges on the top deck. The trip took a couple of hours, the scenery was magnificent and the sea was calm and clear. We docked at one of the islands and then climbed a long staircase up the side of a mountain and entered some huge caverns. The caves were illuminated and had nice tiled pathways and stairs. The caverns were immense, so large that it was hard to realize their actual size. Tom gave us a running commentary, but her English was difficult to understand, so we didn't learn much. This trip to Halong Bay is considered the number one tourist destination in all of Vietnam. In 1994 this area was designated a World Heritage Site and became protected, that shows the importance of this beautiful spot.

We got back to Hanoi late in the day, about 8:30pm, and the driver unloaded all of us at a central location, not at each of our hotels. I was ravished by hunger by this time of day. Our drop-off location was near the lake so there were numerous restaurants to choose from. I chose "Mama Romas", a great choice, if I say so myself. The Ambiance was very nice, right out of Italy. There was a solo violinist playing soft romantic music right across from my table. The meal I ate was better than meals I got when visiting Italy! The only thing I missed was my sweetie who could be sitting in the vacant chair at my table. By the time I walked back to my hotel, the street sweepers, with brooms and shovels were out in force. It's a big job picking up all the trash that is deposited in the gutters and on the streets in this city. During the daytime, people toss all kinds of trash and garbage into the streets and there are piles of stinking garbage everywhere by nightfall. By morning, everything has been cleaned up.
